Stuffed Zucchini Boats
STUFFED ZUCCHINI BOATS
2 large zucchini
1 lb ground meat
3/4 Mozzarella Shredded Cheese, divided
Tomatoes, finely chopped
Onions, finely chopped
Green Peppers, finely chopped
10 30% Less Fat RITZ Crackers, finely crushed
1 tsp. dried basil leaves

PREHEAT oven to 375°F. Cut zucchini lengthwise in half; scoop out centers onto cutting board, leaving 1/4-inch-thick shells. Place shells in 9-inch square baking dish; place in oven to soften shells.
SAUTEE ground meat in large pan.
CHOP zucchini pulp; green peppers, tomatoes & onions. Add to pan. When meat is brown, add basil & crackers to mix.
REMOVE shells from oven & spoon meat, peppers, etc. into zucchini shells; sprinkle with remaining 1/4 cup cheese.
BAKE 15 min. or until heated through.
